The Butcher, The Baker, and The Long Cooking Meat Maker ....

"mmmmm... Meat!"  Billy b, every time he gets meat....

I am really loving slow cooking Paleo style... I know I need to plan a little more and prepare a few more meals than what I have thus far.  I am going to need to double up on the slow cooking.  Find a few things to make during the week, however, that is a story for another day...

Let talk pulled biggie right now...






After 16 Hours we used out Meat Claws to take the pig out of the Slow Cooker

It is some good looking Piggy isn't !  Do you see the bacon laces through it!!!



Then we start pulling out Piggy!


Then we pull a little more Piggy!!!!





Once done pulling, then serve.  I have never had more juicy or tender Pork in my life!  It was really amazing and it melted in my mouth!  Even after reheating today for lunch, it melted away!!!  Awesome!


I will eat it this week in 1 cup serving, along with a little Slaw!







I do love me some pig and slaw! I should have gotten pineapple to, but.... I forgot...

At 11 PM after the cleaning of the crockpot, I embarked on another 14 hours cooking... this time we are doing Paleo Brisket.....


1.  We start with the cleaned Crock Pot.


2.  Add the Carrots!!


3.  Then the mushrooms!



4.  Then the onions... mmm onions.. 


5.  A little Garlic.


6.  A little Beef Broth.




7.  A little Liquid Smoke, mmmmmm, Liquid Smoke. 



8.  Then the Brisket!  2 lbs.


9.  Add the Brisket to the Pot!
  

10.  Add the Salt.



11.  Got to rub that meat with the salt!!! Rub that meat, rub that meat!!!


12.  Pepper to Flavor. 


13.  Then we get the Sprigs of Thyme.  Don't know what a Sprig of thyme is?  I didn't either until I went to Trader Joe's to figure it out. 


14.  Cover the Brisket with Thyme.


15.  Then cover it.


16.  Then Cook!  14 hours!

Yum Yum... I think next time I will have to do a brisket just for the week ahead.  There isn't really enough to eat off it and make meals for the week.  I mean it is 2 lbs, not 5 lbs like the piggy.  

Things on the to do list for the crock pot..  a Jerk Chicken sounds good, right... Ribs.  Short Ribs.  Well the list goes on and on... I love it!  This is the best way to spend the weekend ever, well all most ;)
