The Butcher, The Baker, and The Long Cooking Meat Maker ....

"mmmmm... Meat!"  Billy b, every time he gets meat....

I am really loving slow cooking Paleo style... I know I need to plan a little more and prepare a few more meals than what I have thus far.  I am going to need to double up on the slow cooking.  Find a few things to make during the week, however, that is a story for another day...

Let talk pulled biggie right now...






After 16 Hours we used out Meat Claws to take the pig out of the Slow Cooker

It is some good looking Piggy isn't !  Do you see the bacon laces through it!!!



Then we start pulling out Piggy!


Then we pull a little more Piggy!!!!





Once done pulling, then serve.  I have never had more juicy or tender Pork in my life!  It was really amazing and it melted in my mouth!  Even after reheating today for lunch, it melted away!!!  Awesome!


I will eat it this week in 1 cup serving, along with a little Slaw!







I do love me some pig and slaw! I should have gotten pineapple to, but.... I forgot...

At 11 PM after the cleaning of the crockpot, I embarked on another 14 hours cooking... this time we are doing Paleo Brisket.....


1.  We start with the cleaned Crock Pot.


2.  Add the Carrots!!


3.  Then the mushrooms!



4.  Then the onions... mmm onions.. 


5.  A little Garlic.


6.  A little Beef Broth.




7.  A little Liquid Smoke, mmmmmm, Liquid Smoke. 



8.  Then the Brisket!  2 lbs.


9.  Add the Brisket to the Pot!
  

10.  Add the Salt.



11.  Got to rub that meat with the salt!!! Rub that meat, rub that meat!!!


12.  Pepper to Flavor. 


13.  Then we get the Sprigs of Thyme.  Don't know what a Sprig of thyme is?  I didn't either until I went to Trader Joe's to figure it out. 


14.  Cover the Brisket with Thyme.


15.  Then cover it.


16.  Then Cook!  14 hours!

Yum Yum... I think next time I will have to do a brisket just for the week ahead.  There isn't really enough to eat off it and make meals for the week.  I mean it is 2 lbs, not 5 lbs like the piggy.  

Things on the to do list for the crock pot..  a Jerk Chicken sounds good, right... Ribs.  Short Ribs.  Well the list goes on and on... I love it!  This is the best way to spend the weekend ever, well all most ;)

Gobble Till You Wobble V: A Man and His Meat….

I knew the day was going to be serious when I set the alarm for four a.m.  Not to go on a trip.  Not to go Black Friday shopping.  Not to watch the new Star Wars teaser that was the day before.  No, I was up with one sole purpose and that was to rub my meat. 

Yes, so what I set my alarm to start rubbing my meat at 4, you say that like it is a bad thing.  I had been thinking about rubbing my meat since the time I went to bed the night before.  I mean rubbing it down with delish crushed garlic, and the Hawaiian Alaea Red Sea Salt, ohhh, ya!  I meant business this a.m. for sure!

Ever since I came across the Slow Cooker Kalua Pig from “Nom Nom Paleo” I have been salivating.  I mean it just looked so fucking good!  I have been on a roll.  My pig last week was good.  My chili has been good.  My BBQ isn’t too shabby.  My ketchup, well it is lumpy.  So I am like fuck it! I can do this.  I can do it.  I can’t even screw up a three-ingredient recipe in a slow cooker, can I?  I mean I have been known to fuck up a wet dream, but a slow cooked Kalua Pig, challenge accepted. 

So, I got up and I rubbed my meat in Garlic and Salt… and today I have patiently waited for the pig to cook… We are 13 hours in at this point (set my alarm for 4, but didn’t turn it on so the meat rubbing didn’t start until 6). 



Thanks again Nom Nom Paleo, I am glad I ordered your cooking book!

Start with:

5 lbs of pig butt
Alaea Red Sea Salt
Garlic (5 cloves)
3 slices of bacon... I love bacon so I used four and I had a fourth :D

Then...

line the slow cooker with bacon:


Then get your salt:
GET YOUR MEAT READY:


Rub that meat and put it in the pot!!!
Then Start it up at 6 a.m.
Check it occasionally:


Look at it and smell it a little with three hours to go:

And while this is cooking I go to Bed, Bath, and Beyond... and get my new toy!




I am so ready to pull this thing when it comes out.... at 10 p.m.... 


Also, another first today, I fried some bacon for breakfast... always microwaved before... it was fuck :)



I know what you are thinking you burned it billy b, but I didn't, I like my bacon crispy and a little burnt :D
